Why your diet should include more fat

Think back to the '80s and '90s when buying anything that didn't don a low-fat label was simply taboo. Back then, butter and egg yolks topped the "do not eat" list, while refined carbs and packaged foods weren't given a second thought. But times have definitely changed.
These days, experts tout fat as a must-have macro and full-fat products, like whole milk, avocado, ghee and coconut oil, join the ranks of superfoods.

Vegetarian cafe refuses to accept £5 note made with animal byproduct

A vegetarian restaurant owner’s decision not to accept the new £5 note because it contains traces of meat byproducts has come under fire from vegetarians and omnivores alike.

Sharon Meijland, who has run the Rainbow cafe in Cambridge for three decades, said she would not allow customers to pay with the polymer note because the animal byproduct tallow is used during the production process.

Osteria Francescana: does the world’s best restaurant live up to the hype?

Osteria Francescana, which this year was named number one in the World’s 50 Best Restaurants awards. In 2015, it was second; it has been in the top five since 2011. It won its third Michelin star in 2012. It is also, according to Michelin, the best restaurant in Europe. Osteria Francescana is owned and run by a native of Modena, Massimo Bottura, and this is where he placed his restaurant.
The Five Ages Of Parmesan is, perhaps, Bottura’s most famous dish, and it has taken him two decades to perfect it. It is, as it says, five cheeses of different ages: a sauce, an “air”, a demi-soufflé, a foam and a galette, which stands above the rest like a tiny spaceship. The description, again, is ludicrous – “the white on white monochrome is a portrait of the Modenese landscape covered in fog and silence” – but it looks and tastes marvellous. Bottura has nailed parmesan. It is definitive, and has nowhere else to go.

Thousands of UK restaurants could go bust, accountancy firm warns

Thousands of restaurant businesses in Britain could go bust because the fall in sterling since the Brexit vote has sharply raised the cost of imported food and wine, an accountancy firm has warned.
Moore Stephens says that 5,570 restaurant businesses have at least a 30% chance of insolvency in the next three years, due to inflationary pressures and stagnating disposable incomes.
The UK imports 48% of its food, according to government figures, and many restaurants rely heavily on imported food and wine. The cost of labour has also gone up, after the government raised the national minimum wage from £6.70 to £7.20 in April, with a further rise to £7.50 to take place next April.
